
Gulf & Graze: A Bold West Coast Florida Five-Course Tasting Experience
Join us inside The Library at Spinnaker on Saturday, July 18 at 6:30 PM for Gulf & Graze, an intimate five-course tasting experience inspired by the flavors, textures, and coastal spirit of West Coast Florida.
This chef-curated evening takes guests from bright Gulf seafood to smoky dockside flavors, rich land-and-sea pairings, and a dramatic final course. Each menu item is thoughtfully paired with a featured beverage to complement the dish and elevate the experience.
The evening begins with Florida Triple Tail Crudo, served with compressed watermelon, charred jalapeño oil, pink sea salt, pickled key lime rind, and a crispy plantain shard, paired with a refreshing Gulf Coast Chili Limeade.
Next, guests will enjoy Ember-Grilled Gulf Octopus with smoked white corn puree, crispy chorizo dust, charred scallion oil, and fire-roasted tomato jam, paired with a bold Harborside Old Fashioned.
The third course features Coal-Seared Wagyu Strip with blue crab butter, crispy oyster mushrooms, sweet corn ash crumble, and molasses beef reduction, paired with an Umami Martini.
For the fourth course, enjoy a Smoked Grouper Chowder Shot served with a mini grilled cheese stuffed with pimento and smoked gouda, paired with a “Seaside Mary” Bloody Mary.
The evening concludes with Cocoa-Crusted Beef Short Rib featuring Florida cane syrup glaze, lobster risotto, black garlic demi, and crispy shallot hay, paired with Southwest Sangria.
An optional dessert add-on, Burnt Orange Bread Pudding with brown butter rum caramel, candied pecans, and vanilla bean cream, will also be available with an Orange & Apple Pie Espresso Martini.
